After seeing some amazing results in my friends when they started the Ketogenic Diet I thought, I should try this out. I had hit a wall in my weight loss and toning, nothing seemed to be working. Seeing before and after shots of people I know in real life and not some paid advertisement I jump on the Keto bandwagon. Not before I did some research though. I mean, I NEED my half and half, and sugar. Thank goodness for stevia!
Next issue of course was creating recipes that my whole family would like and I wouldn't hate. Sometimes being on a diet means eating things you don't love. I knew if I couldn't come up with ways to modify my favorite foods this determination wouldn't last long. There is only so long I can eat stuff that taste blah. Pizza was my first challenge. We have a pizza movie night very Friday. There was no way, I would sit there eating sad salad while my kids chowed down on delicious homemade pizza. So I came up with this recipe, that is not only a Keto friendly pizza, but a kid friendly one too. My whole family loves this pizza and they don't even miss the crust!
Another reason to love this recipe: it's easy. I mean super easy. Brown the sausage, sauté veggies if you want, add cheese, and bake for 20 minutes. Done!

Ingredients:

1 Can Diced Tomatoes

Package of Sausage

Pepperoni
-
Any Vegetables You Choose

Package of Shredded Cheese
-
Dried Oregano
-
Garlic Powder
Directions:

Preheat the oven to 350

Brown sausage in a skillet, drain when done.

While the sausage is cooking, sauté any veggies you picked out.

Layer a 13×9 dish with the sausage.

Top the sausage with diced tomatoes. I then sprinkle oregano and garlic powder on the diced tomatoes.

Add sautéd veggies, and cover with shredded cheese.

Add pepperoni on top of the cheese

Place in oven and heat through for 20-25 minutes.
Note: I did not use any veggies in this version because we didn't have any mushrooms. And I was not about to fight the crowds at Wegmans on a Friday night! I also use any cheese I happen to have at the house. So don't stress if you have triple cheddar and not pizza blend. Cheese is delicious no matter which package you use!
